Right next door to the sister brewery Southern Tier Brewing, in the woods of Lakewood, Southern Tier Distilling opened in 2015 and produces some interesting products, mostly gins and whiskies.

"Take for example, our rum. While we aren’t technically allowed to call it rum, we still distill it from black strapped molasses then enhance it by adding 20,000 lbs of locally made NYS Maple Syrup. We in turn age that spirit in maple syrup barrels producing our wonderfully procured “Maple Aged Spirits” with a beautiful maple and vanilla taste profile."
